What is the easiest coding speciality to learn and what coding specialities are in demand in the job market?

I don't think any medical coding can be called "easy". Look at job ads in your area to see what is in demand in your area. Then research the different certifications and what each one codes for. Chose an area of medicine that interests you and consider learning that area.
