Surveyors view F371 violations as the ticket to helping prevent food-borne illness in nursing facilities, which can be fatal to residents. The following real-life citation provides a "heads up" for what you don't want to see in your kitchen.
"The facility failed to provide a clean and sanitary dietary department. Numerous problems were evident during a tour on 9/8/02, representing a long-term lack of an ongoing cleaning program."
"Fans observed in the walk-in refrigerator, which view directly onto shelving containing food items, were
coated with a heavy build-up of dust and grease."
"The floor in the walk-in refrigerator was heavily soiled with dried food spills."
"The convection oven was leaking water onto the floor; a shelf located beneath the oven, which was used to store clean baking pans, was wet with leaking water."
"The vents of the exhaust hood located directly above the cooking area had a heavy accumulation of grease and dust."
